Press tofu to remove excess moisture. Cut into cubes.
2. Heat vegetable oil in a large skillet or wok over medium-high heat.
3. Add tofu cubes and fry until golden and crispy on all sides, about 5-7 minutes.
4. Remove tofu and set aside.
5. In the same pan, add garlic and ginger; sauté for about 1 minute until fragrant.
6. Add snow peas and pear slices; stir-fry for 2-3 minutes until peas are tender-crisp and pears start to soften.
7. Mix soy sauce, rice vinegar, sesame oil, and maple syrup (if using). Pour over the vegetables and pears, tossing gently to coat.
8. Return tofu to the pan; toss everything together and cook for another minute to heat through.
9. Garnish with sesame seeds and sliced green onions before serving.
10. Serve with jasmine rice or noodles.
