In a saucepan, add pear cores, peels, water, sugar, and lemon peel/juice. Add optional spices if using.

2. Bring to a boil, then reduce to a gentle simmer. Let it simmer uncovered for 30–40 minutes, stirring occasionally, until the liquid reduces and thickens slightly.
